Baked Oatmeal







                            Baked Oatmeal

Combine:
4 c milk                               1/2 tsp salt
4 eggs                                  1 T baking powder
3 c uncooked Oatmeal*       1 T Apple Pie Spice (or pumpkin pie spice) 
1/2 c brown sugar                1 tsp nutmeg
1/2 c applesauce**               1 tsp vanilla
                                             1 c raisins or cranberries (Optional)                                          
 
                                             1/2 c walnuts (Optional)

Bake in 9x13 pan at 325 degrees or 45 minutes. Let set overnight. 
Serve with milk, cream, or whip cream.  You can heat  up in the microwave
oven about 1 to 2 minutes on high.    Enjoy
* I use the old fashion oatmeal
** you can use 1/2 c oil in place of the applesauce and I use the no sugar added to my applesauce...
   but then my applesauce is home made...

Coconut Impossible Pie




Coconut Impossible Pie

All the ingredients are mixed together and poured into a pie tin, but when it cooks it forms its own crust with filling This has a coconut vanilla taste like a coconut cream pie

Ingredients

2 cups milk

1 cup shredded coconut

4 eggs

1 teaspoon vanilla extract

1/2 cup all purpose flour

8 Tablespoon butter

3/4 cup sugar

1/4 teaspoon ground nutmeg

Directions Place milk, coconut, eggs, vanilla, flour, butter and sugar in blender. Mix well. Pour into a greased and floured pie plate. Sprinkle nutmeg on top. Bake at 350 degrees for 45 minutes.

Taco Soup

8 Can Taco Soup
1 Can Corn (Drained)

1 Can Diced Tomato’s

1 Can Chicken Broth

1 Can Cream of Chicken Soup

1 Can Green Enchilada Sauce

1 Large Can Chicken Breast (Or 3 Chicken breasts, cooked and cubed)

1 Can Black Beans (Drained and Rinsed)

1 Can Kidney Beans (Drained and Rinsed)

1 Package Taco Seasoning

Pour all ingredients into a pot or crock pot and let simmer. Laddle into a bowl and top with sour cream and grated cheese if desired

Chicken and Jalapenos Casserole

For freeze ahead
PREPARE as above; do not bake. Cover; freeze for up to 2 months. Thaw overnight in refrigerator. Uncover.
PREHEAT oven to 350–F.
BAKE 60 to 70 minutes or until knife inserted in center comes out clean. Season with salt.

Ingredients
  • 2 cups cooked rice
  • 2 cups (8 ounces) shredded Monterey Jack cheese
  • 1 1/2 cups cooked, chopped chicken breast meat
  • 1 can (12 fluid ounces) Nestlé Carnation Evaporated Milk
  • 1/2 cup finely chopped red onion
  • 2 large eggs, lightly beaten
  • 1/4 cup finely chopped cilantro
  • 2 tablespoons butter or margarine, melted
  • 1 tablespoon diced jalapeños
  • Salt

Preparation 
    1. PREHEAT oven to 350–F. Lightly grease 2-quart casserole.
    2. COMBINE rice, cheese, chicken, evaporated milk, onion, eggs, cilantro, butter and jalapeños in prepared casserole; stir well.
    3. BAKE 45 to 50 minutes or until knife inserted in center comes out clean. Season with salt.

Scooter's (baked) Spaghetti



I found this recipe the other day on Pinterest and thought I would try it.  It is now a family favorite.  Well, most of the family that is.  It is a bakes spaghetti.  Easy and oh so yummy!!  Enjoy!!




Scooter's  Spaghetti

Ingredients

·       8 ounces uncooked spaghetti

·       1 pound ground beef

·       1 large can spaghetti sauce (26.5 ounces)

·       1 tablespoon butter

·       1/2 cup chopped green peppers (I usually omit or substitute red peppers)

·       1/3 cup chopped onions

·       8 ounces cream cheese

·       2 tablespoons milk

·       Fresh grated Parmesan cheese

·       French Fried Onions (small can)

Directions

  1. Cook spaghetti according to directions on the package. Cook to al dente, drain and set aside.
  2. Brown ground beef. Drain excess grease. Add spaghetti sauce to skillet and heat.
  3. Combine onions, peppers and butter in small glass bowl. Cover and microwave 4 minutes on HIGH until soft.
  4. Add cream cheese and milk to vegetables and stir well. (If cream cheese is not soft, nuke it for 20-30 seconds to make it easy to spread.)
  5. Using a 10 x 6 dish, assemble in the following order:
  6. Thin layer of spaghetti sauce on the bottom of the casserole dish.
  7. Spaghetti
  8. Cream cheese/vegetable mixture
  9. Spaghetti sauce
  10. Parmesan Cheese (amount subject to your own taste)
  11. French Fried Onions (added during last 5 minutes of cooking)
  12. Bake at 350 degrees for 25 minutes. Top with French Fried onion and continue baking 5 more minutes. (This is the secret ingredient–don’t let them burn.)

Notes

Make this ahead of time and refrigerate or freeze without the French Fried onions. Don’t forget to add them 5 minutes before casserole is finished cooking.

Fudge Pecan Pie

Fudge Pecan Pie

½ cup butter
3TBSP cocoa
¾ cup hot water
2 cups sugar
½ cup flour
1/8 tsp salt
1 tsp vanilla
½ can evaporated milk (6 oz)
1 cup pecan halves
Pie Crust
Whipping Cream

Preheat oven and cookie sheet to 359 degrees. In medium sauce pan, melt
Butter, add cocoa, and stir until dissolved. Add hot water and stir again.
With sire whisk blend in sugar, flour, salt, vanilla, and evaporated milk.
Stir until custard is smooth. Mix in pecans and pour into pie shell. (I use the glass
deep dish pie pan). Bake on preheated cookie sheet for 50 minutes or until custard sets.
Remove from oven and allow to cool for at least 1 to 2 hours. Garnish with whipped topping.
